Hey guys, it’s Maddie here at As You Wish Pottery. I’m super excited to get to share some fun and exciting topics with all of you! Today I will be sharing a super easy (and Weight Watcher friendly) Peach Cobbler recipe in light of National Peach Day! This was the simplest recipe I have ever used for a dessert! I was even able to have my three-year-old help me with most of it.

Ingredients –

  • 2lbs of frozen peaches
  • 1 bag of yellow cake mix
  • 1 can of Sprite/7UP

If you’re anything like me when it comes to baking or being in the kitchen, I want to be done as quickly as possible, am I right? So, when I saw the short list of ingredients, I was so DOWN! (short list means quick recipe?) Because it was such a short recipe, I decided to have my little guy help me in the kitchen. I love getting to spend some one-on-one time with him. Hopefully one day, he will remember these moments and utilize them in his cooking future! You should definitely include your little(s) in this fun recipe, they’ll love it and you will too!

Anyway, our first step was to find a dish to bake our cobbler in. I used a 9×13 clear glass baking dish.

Next we opened the bags of frozen peaches. (I purchased these at my local Walmart for under $3 for a 1lb bag) I had him dump both bags out and spread them evenly through the dish. He got a kick out of them being so COLD!

After the peaches were in the dish, we opened the cake mix. (I purchased a Betty Crocker yellow cake mix at my local Walmart for a $1.18) This part got a little messy! I had him try and sprinkle the dry mix all over the peaches. -I helped him with this part of course but we had a little bit of a mess anyway! But that’s ok, he thought it was fun and silly. The look on his face was worth it!

After we covered the peaches, we then opened the can of sprite and poured all its contents on top of the dry mix. Now this part is VERY important! We didn’t cover up all the areas very well, so we had some dry cake mix left on our cobbler… So learn from our mistake and cover ALL of the cake mix thoroughly!! You’ll thank me later ?

Now all that’s left, is to cover the dish with some foil and pop it in the oven for an hour! After 20 minutes, remove the foil and let bake without it.
