Chocolate Chip Coconut Cookies for Santa


Happy Holidays! It’s Vanessa of See Vanessa Craft, back with a cookie recipe that Santa will love. If you are a chocolate chip cookies fan, you need to try this coconut version. They are amazing! Your kids can help make a batch for the big guy on the night before Christmas. Make sure to head into As You Wish to paint a “Cookies for Santa” platter for these special cookies!


1/2 cup butter
3/4 cup sugar
1 egg
1/2 teaspoon coconut extract
1 cup flour
1/2 teaspoon baking soda
1 cup chocolate chips
1/2 cup shredded coconut


Head into As You Wish to paint a platter for Santa’s cookies!


Preheat the oven to 350 degrees. Add the butter and sugar to a hand or stand mixer and mix until creamed. Add the egg, coconut extract, flour and baking soda. Mix until smooth.


Fold in the chocolate chips and shredded coconut. Roll into 1 inch balls and place on a baking sheet. Bake at 350 degrees for 10 minutes or until cookies are golden brown. Allow to cool before placing on a platter for Santa.


Santa may also like my peanut butter chip cookies, orange marmalade thumbprint cookies or apple pie cookies!
